Mushroom Quiche


1T Olive Oil

1t Garlic, minced

1 Shallot, small, diced

2t Thyme, fresh

1C mushrooms, sliced

3 Eggs, beaten

1/3 C heavy cream

1/3 C cheddar

Salt & Pepper


Heat olive oil, add garlic and shallots, cook for 30 seconds.  Add sliced mushrooms and thyme along with salt and pepper.  Cook till mushrooms are tender.  Beat your eggs in a bowl add the heavy cream.  Pour mushroom mix into prebaked pie shell.  then add cheddar, then pour the egg mix over top and bake at 350 degrees until set about 25-30 minutes.
